Toddler Tummies- Egg Salad Pops!

I’m going to start doing a recurring blog post called Toddler Tummies. These posts will have simple, healthy snacks, that have been toddler approved!

Today’s Toddler Tummy recipe is simple and fast, Pop Chips with Egg Salad!

My son is a big fan of pop chips which is great because they are low in calorie and made from potatoes making them gluten-free. However, I don’t want him snacking on pop chips alone, so the other day I placed some egg salad on each chip and he loved it!

To boil the perfect egg you can place desired amount of eggs in a pot with just enough water to cover the eggs. Bring to a boil then cover and turn off the heat. Let it sit for 30 minutes and then move eggs to the refrigerator.

To make the egg salad you can peel your eggs and add a spoonful mayo, a tbsp of ketchup, and a little bit of Dijon mustard and salt. Mix well and then put dabs of the salad on top of the chips.
